1. Remove membrane, from boney side of ribs.
  2. Season both side of the ribs with a heavy coating of Dizzy Gourmet Down and Dizzy.
  3. Preheat BGE to 275 degrees.
  4. Soak 3-4 large size of hickory chunks in water or apple juice overnight.
  5. Drain 15 minutes before adding to hot coals.
  6. ConvEGGtor in in BGE with legs up. Place grid on top of ConvEGGtor, place V Rack in center of grid.
  7. Cut ribs in half and place in V Rack. Make sure meat does not hang over the sides of the ConvEGGtor.
  8. Smoke ribs for 2 hours at 275 degrees.
  9. Remove ribs
  10. Place ribs in aluminum pan.
  11. Add 1/3 to ½ inch of apple juice to bottom of aluminum pan.
  12. Seal completely with foil.
  13. Place back on BGE for 1 ½ hour.
  14. Remove ribs from aluminum pan, place back on grid and baste for 3-5 minutes with Smoke house Style BBQ sauce Sweet and Smokey.
  15. Cut and serve

Cut Ribs
