
- Remove membrane, from boney side of ribs.
- Season both side of the ribs with a heavy coating of Dizzy Gourmet Down and Dizzy.
- Preheat BGE to 275 degrees.
- Soak 3-4 large size of hickory chunks in water or apple juice overnight.
- Drain 15 minutes before adding to hot coals.
- ConvEGGtor in in BGE with legs up. Place grid on top of ConvEGGtor, place V Rack in center of grid.
- Cut ribs in half and place in V Rack. Make sure meat does not hang over the sides of the ConvEGGtor.
- Smoke ribs for 2 hours at 275 degrees.
- Remove ribs
- Place ribs in aluminum pan.
- Add 1/3 to ½ inch of apple juice to bottom of aluminum pan.
- Seal completely with foil.
- Place back on BGE for 1 ½ hour.
- Remove ribs from aluminum pan, place back on grid and baste for 3-5 minutes with Smoke house Style BBQ sauce Sweet and Smokey.
- Cut and serve
